Truffle Peanut Butter
Life feels like a bit of a blur right now. Weekends are melting into one another and time is flying faster than I can get things done. Somehow, I feel lighter on my feet. More importantly, I feel lighter emotionally. My courses for school are going well and I am searching for some sort of stability with work before I make some big moves.
I have a date tomorrow! – Honestly, I have about 2-3 a week, but this new one tomorrow feels special and old fashioned in every way. I'm excited for it.
This past week, I took some time to revert back to activities that bring me peace and joy. I started puzzling again, and made some pickled onions to go with my sandwiches during the week. I am finally feeling confident about going back to the gym. While my body looks great, I love the discipline of a daily workout. It’s cold as hell outside, but that is not an excuse.
And while I still have not gotten back into my love of finance podcasts, I did take some peaceful hours after work to shell some peanuts and reflect on life. What came from these peanuts was a message that I might not have been ready to hear. I spent almost a week shelling hundreds of peanuts to make this recipe. Honestly, you do NOT have to do this the way that I did. But I did want a distinct flavor that I knew would not come from a gallon sized box of nuts at the store.
Aside from the initial labor, this was probably one of the simpler recipes that I have made this month.
Ingredients:
3lb raw, unsalted peanuts
1 tbsp truffle oil (optional)
½ tsp salt
Instructions:
Preheat the oven to 250 degrees. Lay the peanuts flat on a baking sheet and pat gently to ensure they spread evenly across the sheet.
Slowly roast them for about 30 minutes
Remove the nuts from the oven, give them a quick mix and then place the nuts into your food processor. They must be warm.
Blend on high for 10 minutes. If your nuts begin to pile up on one side, take short breaks to scrape down the sides.
Add your truffle oil (optional), salt, and then blend again on high for another 10 minutes.
Taste test and then add more salt to your liking!
This recipe makes an incredibly smooth and tasty peanut butter without added sugars or ingredients that you can't pronounce. Phenomenal. Store in an airtight container in the fridge.
