Energizing Granola Nut Bars

Ok, so this might be my favorite granola bar recipe thus far! It’s nutty, filling, flavorful, and not too sweet! I wanted to try my hand at a classic granola bar at home this week, but I did get a bit carried away with the ingredients. I'm trying to be more resourceful in the kitchen and leave less waste to be thrown out at the end of each month. Overconsumption is a slur in my household! 

Let's get into these bars. 

Ingredients:

⅓ cup walnuts chopped 

⅓  cup chopped almonds 

¼ cup sweetened shredded coconut

1 tbsp of honey 

⅓ cup maple syrup

¼ tsp salt

⅓ cup dark brown sugar 

¼ cup unsalted butter, browned 

1 tsp vanilla extract 

2 cups rolled oats

¼ cup ground flaxseed

¼ cup mini semi-sweet chocolate chips

Directions:

  1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.

  2. Spread the oats, chopped nuts, and coconut in an even layer on the baking sheet and bake for 15 minutes.

  3. While the oats and nuts are toasting, use a large pot to combine the honey, brown sugar, butter, and maple syrup. 

  4. Warm the pot and stir the ingredients until fully melted. Stick to a low/medium heat.

  5. Finally, stir in the salt, cinnamon, and vanilla. Remove from heat.

  6. Fold in the toasted oat mixture and ground flaxseed until sticky.

  7. Scrape the mixture into an 8x8 baking dish, lined with foil and press the mixture evenly flat. 

  8. Cover with an additional sheet of foil and place in the freezer for two hours. 

  9. After solid, remove from the freezer, slice evenly with a SHARP knife, and then store in the fridge. 

  10. Enjoy! 

These are great for my new commute to work and they make me feel really good and energized after a few bites.
