Whole Wheat Honey Oat Bread

I have always secretly had this fear of becoming someone who eats so healthy that their palette becomes dry, boring, and quite depressing. Ladies and gentlemen, I think we are here. This is literally a whole wheat bread. How much more geriatric can we get?

Fair warning, this bread is VERY dense. It also requires rising overnight. Still super flavorful and filling. 

Ingredients:


3 cups whole wheat flour

1 cup rolled oats plus extra for sprinkling on top 

2 tsp (1 packet) ActiveDry instant yeast 

1½ cup warm water (110-115 degrees)

6 tbsp pure clover honey 

1 tsp salt 

2 tbsp olive oil


Directions:


  1. Mix the warm water, yeast and honey together in a large measuring cup. Set aside for 5 minutes until frothy. 

  2. Combine the flour, oats and salt in a large mixing bowl and whisk until just combined. 

  3. Add the olive oil to the proofed yeast, and then pour the wet ingredients into the flour mixture. 

  4. Get your hands in and mix until all the ingredients are completely combined. Form the dough into a ball.

  5. Cover the dough with plastic wrap then place in the fridge overnight to rise. 

  6. Pull the bread from the fridge and let it sit at room temperature for an hour.

  7. Preheat the oven to 350°F.

  8. Turn the dough out on a surface dusted with flour and form into a loaf. 

  9. Transfer to a greased loaf pan 

  10. Sprinkle a little extra oats on top of the loaf and lightly press them down.

  11. Bake the loaf for 45 minutes until golden brown and cooked through. 

  12. Remove the loaf from the oven let cool for 10 minutes before serving


This bread is phenomenal as a basic toast with butter. Yum!
