Miso Mirin Salmon

This recipe REQUIRES overnight marinating 

I can not rave enough about this salmon recipe. It’s sweet, it’s soft, it gives you that moment from Ratatouille when Remy eats the fruit with the cheese and combines the flavors. Literal flavorful fireworks in your mouth! You will have to both broil AND bake this salmon. The first time that I made it, I actually mixed up the directions, but it actually turned out amazing so we are sticking to that backwards method!

Ingredients:

2lb Fresh salmon (or say “2 salmon portions” if ordering from a fish counter)

½ cup Mirin

¼ cup White miso paste

⅓  cup Cane sugar


Directions: 

  1. In a small saucepan, mix mirin, miso, and cane sugar.

  2. Bring to a boil for 5 minutes and continue to mix until completely combined.

  3. Set aside and let the sauce cool to room temperature.

  4. In a medium sized bowl, place salmon and then pour in marinade sauce to completely cover the salmon. Turn the salmon several times to fully coat and refrigerate for 24-48 hrs. 

  5. Remove the salmon from the bowl and place into a cast iron or oven safe pan. Cover lightly with remaining marinade. 

  6. Broil on High for 7 minutes. 

  7. Remove and then bake at 375 for 10 minutes.

  8. Enjoy! I usually serve with broccolini and mashed potatoes.
