German Coconut Macaroons

It has been a bit of time since my last bit of life update. Today I sort of just want to stress the importance of taking advantage of opportunities. 

Earlier last week, I sent one single email just asking for some guidance from a faculty member at my school. This week, my life and career projection has taken such a new and hopeful outlook. 

Growing up, I was never taught the power of networking. I genuinely thought that networking was a group of adults standing around in a room, drinks in hand, and they pretended they enjoyed their lives for two to three hours at a time. As I have gotten older, intentionally putting myself in environments that properly served my needs, I have learned the power of a simple ‘hello’. That greeting has landed in me at events of millionaires in my neighborhood. I have seen more of the world within the past 2 years, than I have in my entire young adult life because I saw value in connecting with people. 

Doing work on myself and committing to my hobbies makes me so much more interesting. My best friend will attest to this – I will never just say “I want to try tennis”. Even if I only have enough money to go to a handful of classes, I will be on that roster for the next beginners course by the morning. Having a wide array of hobbies and interests has made me so interesting to talk to. That combined with educating myself on how to direct a conversation, and analyzing the goals of every message that I speak. A combination of these things make people believe that I am intelligent and capable of anything. 

The confidence that I have given myself by simply learning how to articulate my words is so unmatched. There are days where the reassurance of the people around me makes me feel like I am capable of conquering the world, and they are absolutely right to believe in me because they are able to understand me. 

As of a week ago, I have switched my major to finance from economics, partnered with a new advisor for my research, and connected with a possible mentor in the finance department at my school. My goal is to become a CFP, and while my journey finding my footing in private banking has been difficult, I truly believe that there is an establishment out there willing to see my work ethic and my transferable skills. Black women make up less than 1% of the CFPs in our country. I will be one of them. 

Now! Below is a recipe for a German Coconut Macaroon. I got a bag of really good macaroons from Amazon Fresh over the weekend, and I thought to myself that it’s been a while since I’ve baked something sweet (for a good reason though – I struggle with portion control when it comes to sweets). These cookies are soft, sweet, and just incredible for a quick fix on your way to bed.

Ingredients

  • 2/3 cup all-purpose flour

  • 51/2 cups flaked coconut

  • 1/4 teaspoon salt

  • 1(14 ounce) can sweetened condensed milk

  • 2 teaspoons vanilla extract


Directions:

Preheat the oven to 350° F

In a large bowl, combine flour, coconut, and salt.

Stir in sweetened condensed milk and vanilla until completely combined.

Drop by rounded teaspoonfuls onto cookie sheets lined with parchment paper.

Bake for 15 minutes or until the tops are slightly golden brown.
